With summer just around the corner, I thought I would share this delicious recipe for Summer Garden Panini's.
INGREDIENTS - 2 Tbsp. lemon juice 1 Tbsp. extra-virgin olive oil 1/4 tsp. salt 1/4 tsp. black pepper 1 (6x12-inch) loaf whole-wheat ciabatta, split, soft centers removed 4 red leaf lettuce leaves 1 yellow bell pepper, sliced 6 radishes, thinly sliced 1/2 small red onion, thinly sliced 1 small zucchini, thinly sliced 2 tomatoes, thinly sliced 6 oz. part-skim mozzarella cheese, thinly sliced 1 c. packed fresh basil leaves
METHOD - 1) To make the dressing, combine the lemon juice, oil,
salt & pepper in a small bowl, beating with a whisk until blended.
Brush the cut side fo the top half of the bread with 1 Tbsp. of the
dressing and set aside. 2) Layer the remaining bread with the
lettuce, bell pepper, & radishes; drizzle with 2 tsp. of the
dressing. Layer with the onion and zucchini and drizzle with another 2
tsp. of dressing. Layer with the tomatoes and cheese and drizzle with
remaining dressing. Add the basil and cover with the reserved brea, cut
side down, pressing it firmly. 3) With a serrated knife, cut the loaf crosswise into 6 pieces.
This will provide 6 servings and best of all they are only 4 Weight Watchers points per serving!
